How do you determine your playing level?

How do you determine your playing level?

I was wondering if playing level is linkable to the piece of music that one can play.

For instance if you can play Chopin Polonaise Heroic start to finish like Rafal Blechacz



then you are Master.

For other levels, is there some rating system to help gauge progress?

I ask because, I'm trying to catalog music based on difficulty to play.
The music I'm looking at are in sheet music that I want to simplify to help playing easier.
And to do that I want to also put the right level music for simplification in the right bin.

I guess I answered my own question after searching online.

According to this site the heroic is only 8+.
